sustainability guides every step of our process.

Organic viticulture & certification

Nothing synthetic
touches this ground.

We farm 100% organically across every plot the winery owns. Our Viognier is already fully certified organic and the certification is being extended across the remaining varieties — no synthetic chemicals, no pesticides, on any vine.

100% certified vegan winemaking

And nothing animal
goes into the wine.

Every Ézousa wine is Vegan Certified. Through clarification and fining we use no animal-derived agents or byproducts of any kind — plant-based from the vine to the glass.

Circular economy & winery waste reuse

What we take out,
we put back.

Grape pomace — the skins and the seeds — and the lees are never discarded. They are composted and returned to these soils as natural fertiliser, closing the nutrient loop without a single chemical additive.

healthy waters.

The frog on our labels is the Cyprus water frog, endemic to this island and bound to the Ezousa river. An amphibian breathes and drinks through its skin, so it cannot live where the water carries what farming leaves behind.

Which is why its presence, and not a number, is the honest measure of this valley.
